Cedar Plank Smoked Salmon or Trout

  • Select an untreated cedar plank that will fit on your BBQ grill and soak it in water overnight
  • 4 to 6 salmon steak or filets
  • Place fish on the plank
  • Spice to taste with your favorite selection of ingredients (such as: dill, cajun, herbs, salt and pepper or pre-mixed fish spices available in local grocery stores)
  • Place on pre-heated grill at medium temperature.
  • Close the lid of your grill and monitor for 20 to 30 minutes.
  • Open the lid and check if the flesh is flaky ... serve once it is.

NOTE: The plank will start to smolder and smoke will fill the inside of your grill do not panic this is what is suppose to happen.

Basic BBQ Salmon and Trout

Perfect and simple recipe for a whole fish. For example a 10 pound salmon will feed 10 to 12 people when served with trimmings (rice, potato and/or salad)

After having thoroughly wash the fish's body cavity- fill the cavity with your favorite ingredients. My favorites ingredients are:

  • Salt and Pepper
  • Mixed fish species
  • Onion sliced in rings
  • Celery
  • Lemon or lime slices

Place the fish on a double folded piece of aluminum foil. Close the foil by folding the ends and center. Place on pre-heated grill at medium heat for 20 minutes per sides. After the first 20 minutes check the side that you just cooked to see if the meat is starting to get flaky. May require longer cooking depending on the temperature of your individual grills. The recipe works well with a specialty fish BBQ basket.
